When we were in elementary we always had different videos on how our food was made. I had always remembered how the manufacturers does it. They even said what kind they use. They all use different varieties. I have always grown our own, pablano and the pasilla. I have an older oyster blender, I can put my dried peppers in a Mason jar and use the blade housing for the blender on the Mason Jar. It will make it a super fine powder without having to sift and grind again. ...

@FloridaGuy6910 months agoI love making my own chili powders, I usually wash my chilis after I seed them and then put them on my dehydrator for a bit to get them dry again. I often find dirt on the peppers directy out of the bag

@papajoecooking44255 years agoI buy the Barkers mild Hatch Red Chile Pods. I also remove the seeds then place pod on cookie sheet. Place pre heated oven @ 250 deg. for 6 to 8 min. to dry the pods from limber to brittle. Being careful not to burn them. Then grind to a fine powder! I grew up near Hatch N.M. now I live on the east coast. I order Hatch Green Chile Powder. Can’t beat a Hatch Chile. Thank you for sharing! ...26

@carlking85303 years agoI've been making chili powder for several years. I use a recipe from Alton Brown's "Texas Red". He uses ancho, cascabel, and arbol dried chili's. 3 of each, go through the same process as you for preparing the pods. Then I use my cast iron skillet on about medium heat, put the broken pieces in along with 2 tablespoons of cumin seeds and roast them until fragrant (maybe 8 to 10 minutes) being careful not to let it scorch. Set the pan off the heat and let them cool completely. All that goes into my Vitamix blender along with 2 tablespoons garlic powder, 1 tablespoon dried oregano, 1 teaspoon smoked paprika. Turn on the vitamix and it turns it to powder. I made a run yesterday, but I was out of ancho chili's so I subbed 3 guajillo chili's and it turned out great. Made a quart of enchilada sauce using 3 tablespoons of the chili powder, it turned out delicious. I think the combination of the different chili's enhances the flavor. Any recipe I cook that calls for chili powder, I use my homemade. You can basically customize your chili powder to your taste combining different chili peppers together. ...18

It turned out perfect with a little tangents from the tomatoes and chili, perfect combination to make that chili sauce for enchiladas! ...

I've been desperately been searching authentic recipes so I can make my own and I love you! ( Don't worry, I'm a grandmother so I get to say that without being weird) Anyway, I ordered the Barker's mild chili from Amazon and just made my first batch of the Views chili power. OH MY GOODNESS! In my home, I mix new mexico and guajillo chilies toast & grind them into powder. I buy the chilies in bulk, fill up about 3 mason jars full, put in freezer & it stays fresh until the last drop!
