An easy and simple meal prep video on how to smoke cochinita pibil using the Camp Chef Pellet Smoker. If you don't have a pellet smoker you can oven braise it at the same temperature. Ingredients: 10-15 lbs pasture raised pork picnic roast (pork butt or pork shouder is fine) Banana leaves 1 cup lime juice 3 cups water 1/4 cup white vinegar 3 TBSP salt 1 TBSP white pepper 1 TBSP garlic powder few pinches of oregano few pinches of ground all spice few pinches of ground cloves annatto seeds (for color) but not necessary if you can't find it.
